The gooseberry has a sweet and tart flavor profile, which works well in both sweet and savory preparations. The berries can be cooked, mashed, pureed, preserved and even pickled. Cook it down to a delicious jam or syrup for sweet beverages. Enhance baked desserts by stuffing them with gooseberries to add little bursts of acidity. Make a chutney by cooking it down, along with clove, star anise and black pepper.
