Once cultivated by the Aztecs, the chayote is an unusual looking fruit that grows in tropical and subtropical regions worldwide.

The taste can be described as something in between a cucumber and a melon. The entire fruit is edible so the flesh as well as the leaves, stems, roots and seeds can all be used in recipes.

Although it tastes similar to a cucumber the chayote is superior in cooked applications due to the fact that it contains less moisture and remains quite firm. This makes it extremely versatile and you can really go in any direction with the chayote, or as the Jamaicans call it “chocho”.

It also complements rich ingredients like coconut milk and butter while its subtle sweetness pairs well with strong, assertive flavors such as fresh chiles, garlic, lime and warm spices.

Most often, the flesh is cooked lightly although it can be eaten raw as well. Chayote keeps its crispiness when it is exposed to a heat source for a short duration, which makes it ideal for quick cooking such as a stir fry.

Alternatively, you can crisp up slaws, salads and salsas by adding raw thinly sliced chayote. It can also be roasted and added to soups, stews, curries or grilled and served in accompaniment to main courses.

As with most vegetables, make sure to season and flavor well as it will soak up the flavor you expose it to.

Apart from its culinary use cases, the chayote is often used for its medicinal properties. It is also high in potassium, magnesium, folate, and contains vitamin C, B6 and beneficial phytochemicals.

Delivery in the suburbs of Tbilisi (Tabakhmela, Shindisi, Tsavkisi, Kojori, Kiketi, Tskneti, Betania, Akhaldaba and other connected areas) costs 25 GEL.

Storage advice

Chayote will keep up to four weeks when wrapped in a paper towel, placed in a plastic bag, and stored in the refrigerator.
