The artichoke is a native plant from the Mediterranean and Greece and is the best known vegetable there. It is actually one of the oldest foods known to man.

According to a Greek myth, the first Artichoke was a woman of enchanting beauty named Cynara – the botanical name of the artichoke.
The ancient Greeks and Romans considered the Artichoke a delicacy and an aphrodisiac. To this day, it is still considered a delicacy. They are extremely nutritious and rank among the most antioxidant-rich of all vegetables.

If you’re a newcomer to artichokes, you’ll need to learn how to prepare an artichoke. The good news, however, it’s not difficult, and it’s definitely worth the effort. Follow these steps to artichoke nirvana:

To clean the artichoke, remove one inch from the top and a half inch from the bottom and pull back the tightly packed leaves. Then using kitchen shears you just want to cut off the tip of every petal so you’re removing the spikes. Make sure to rinse the artichoke under cold running water to get rid of any dirt that hides behind every petal.

One of the easiest ways to prepare an artichoke is by steaming it. You know the artichoke is ready when you can easily pull off the petals. It will take anywhere between 20-45 minutes depending on the size of the artichoke.
Another great way to prepare an artichoke is by grilling or roasting it. Squeeze a little of lemon juice to prevent your artichokes from browning, brush them with a little bit of olive oil and season well with salt and black pepper. You can easily pierce the stem with a knife when the artichoke is done.

To eat the artichoke, pluck the leaves one by one and scrape off the nutty meaty flesh white flesh at the base of the petal. The leaves are usually paired with dipping sauces and are plucked to reveal the fuzzy “choke” at the center of the vegetable. Take a spoon and slowly scrape out the fuzzy choke until you reach the rich buttery tasting “heart” with a dense layer of nutty, meaty flesh at the base of the stem.
