Purple cauliflower can be used in both raw and cooked applications. It can be boiled, steamed, roasted, sauteed, fried and pickled. Purple cauliflower can also be used as a substitute in recipes for the traditional cauliflower, and is often used for decorative purposes. Its bright purple hue is a beautiful complimentary color to green hued vegetables such as broccoli, green beans and peas. When steamed, it can be blended with beans to create a unique spread for toast. For best results, use within a few days.
